It’s Time for Aperitivo!

On the 56th floor of Palms Casino, with sky-high sweeping views of Las Vegas, an elevated taste of Italy can be found at Vetri Cucina Las Vegas. The team is incredible, including barmen David Cooper “Cooper” and Brad Collins, whom I’ve known for years. Rich conversation and masterfully-prepared drinks keep me coming back. Now, there is even more reason to go with their new Aperitivo Hour, which takes place between 5-6:30 M-F. It’s actually the best time to go because you can watch day turn to night, depending on how long you aim to stay. The menu during this short time is a great way to experience Vetri. Choose from a number of beverages including beer, wine and market cocktails, as well as two different spritzes: the classic Aperol Spritz and the Italicus Spritz for bergamont lovers like myself. The snacks here range from prosciutto with sweet seasonal melon and gnocco fritto (an all-time favorite), an unforgettable veggie antipasti. The assaggi board changes so often that if you were to come back to order the same thing, you’d be delighted to find new and seasonal items on the board to try including eggplant carbonara, herb torta, and spicy nduja. Pastas are always incredible at Vetri and with a selection of three for $12 each, you might as well try them all. And I really couldn’t describe the Ricotta Gnocchi better than that way GM Matteo Giacommazzi describes it: “like eating a cloud.” Finally, for dessert, the chocolate covered grissini is an artisanal Italian version of what Japanese Pocky biscuit sticks aspire to be. But, before I close this post, may I make an added dessert suggestion? From the dessert menu, is the cheese plate of which right now is features Grand Pont L’Eveque cheese with house-made pear jam and fresh honeycomb. Finally, why not ask for a slice of bread and a glass of bubbles, like Deutz Champagne? Heck, start the evening all over again!
