Mid-Century Fine Dining @ Sara’s

You’ll have to do a little work to find it, but once you’re there, it’s the mid-century fine dining spot you’ve been looking for. Sara’s, by Michael Symon, is hidden behind one of the walls at his barbecue joint, Mabel’s, inside the Palms. Enter a small passageway, through a nondescript door, and find an intimate space with rich wood paneling and wrapped leather banquettes. Here, you’ll find seclusion, throwback cocktails, and classically prepared food, namely prime rib served table-side. Symon’s prime rib is dry-aged for 19 days then smoked in-house. It comes in three ways: 10oz thin cut, 14oz medium cut, or a 20oz thick cut. The USDA prime rib beef from Creekstone Farms is served with jus; a showering of fresh horseradish is an option for a powerful punch. Certainly, you can add more decadence with the crab béarnaise shaved truffles or foie gras butter.

To pair:

A perfect wine to accompany this prime rib is the 2016 Cuvée Violette by Clau de Nell from the Anjour-Samour appellation of Loire region in France. Made with the rhythms of the biodynamic calendar, this Cabernet Franc/Cabernet Sauvignon blend is savory and luscious at the same time. The presence of dark bramble of berries, essence of sweet smoldering cigar room, and fragrant herbs from the pan of slow-roasted meat lifts the overall experience of the prime rib.
